Deskripsi Pekerjaan
- Section Management: Oversee the daily operations of a designated station (e.g., Saucier, Grill, or Larder) to ensure smooth service.
- Culinary Excellence: Prepare, cook, and present dishes consistently according to the established recipes and presentation standards.
- Team Leadership: Supervise, cross-train, and motivate Commis Chefs and Demi Chefs within the section.
- Quality & Consistency: Conduct regular tastings and visual checks to ensure all food meets the executive chef’s specifications.
- Inventory & Stock Control: Monitor stock levels, perform daily mise-en-place prep lists, and ensure proper food rotation (FIFO)
. - HACCP & Hygiene: Maintain rigorous cleanliness and food safety standards in compliance with HACCP and local health regulations.
- Waste Management: Minimize food wastage through precise portion control and efficient ingredient utilization.
- Service Coordination: Communicate effectively with the Front of House (FOH) and other kitchen sections to ensure timely delivery of orders.
